Breakfast is very important for me and I decided to try a recipe I was sent the other day. (The video actually has 3 recipes)

You’d think it’s scrambled eggs! Oh, how wrong you are!!! It’s scrambled tofu!!! Yes! Tofu! And it’s freaking amazing!!!

Perfect for vegetarians and vegans for protein intake. It’s light and filling and healthy. I changed the original recipe slightly (no surprise there, right?). I added some kale to my tofu and on the toast on top of avocado and sliced chilli I also have some red pepper and tomato. 2 of my 7 a day is already done. And I’m full, ready for study day in the library (with satsumas, banana and grapes in my backpack – 3 more portions!)
