Another yummy veggie food for Friday! Basically all I did I replaced lasagna sheets with sliced courgette and the rest is just the normal process.

I pre-cooked them just in case the baking wouldn’t be enough. Only for like 5-6 minutes in boiling water.

Then layered them in the baking dish, adding red sauce (soya mince, passata, garlic, onion, pepper, aubergine, celery, rosemary), white sauce (almond milk, flour, pinch of nutmeg) and two slices of cheese and repeat. Warning: do not use sliced cheese for baking! I make this mistake once in every 3 years. Melted sliced cheese creates a flat crust on the top and makes slicing a bit challenging (and if you’re not prepared it will just fall apart…)

But overall it is a very lovely dish. And it’s under 300 calories!!! 299 calories to be exact
