Super Food Salad
Dairy free, Gluten free, Paleo, Vegetarian

¼ cup sliced carrots
2 tablespoons avocado oil
200g sprouting seed mix
¼ cup pepitas (pumpkin seeds)
¼ cup roasted almonds, roughly chopped
¼ cup fresh parsley
½ cup baby spinach
1 small orange, juiced and zested
2 teaspoons honey
– Place carrots onto a lined baking tray, sprinkle with 1 tablespoon avocado oil, and roast for 12-15 minutes on 180°C (356°F). Remove and allow to cool slightly.
– Toss the sprouting seed mix, pepitas, almonds, parsley and spinach in a bowl. Combine the orange juice and honey together to create a dressing and pour over the salad. Add the roasted carrots to the bowl, and sprinkle with orange zest.
